Garlic Pork Rashers - Serves 4
 

What You'll Need:
- 750g (1 1/2lb) pork rashers
- 2 tablespoons oil
- 1 tablespoon canned black beans
- 1 cup water
- 2 teaspoons soy sauce


- 2 teaspoons grated green ginger
- 2 cloves garlic
- 2 tablespoons corn flour
- 2 tablespoons water
- 2 teaspoons sherry


 

1. Chop rashers into 5cm (2 in.) pieces with sharp knife or cleaver.


 

2. Sauté port pieces in hot oil until golden brown.


 

3. Soak washed black beans in a tablespoon of the water for 10 minutes, place in blender with the remaining water, blend on high speed one minute, or mash beans well with the water. Combine soy sauce, ginger and crushed garlic, stir in black bean mixture. Place sauté rashers in pan, pour sauce over, simmer covered, one hour.


 

4. Combine corn flour, extra water and sherry, stir until smooth. Add to pan, stir until sauce boils and thickens, reduce heat, simmer one minute.
